Fontina is made in the Aosta Valley, a North-Western part of Italy that borders France and Switzerland. The milk used in the production of this cheese comes from Valdostana cows, that graze on the wild flowers, native herbs and locally-grown hay in the Alpine pastures.
It is aromatic and slightly pungent, with a smooth and dense texture. Tastewise, it is nicely balanced with sweet and savoury notes of grass, earth and fruit.
The Fontina is a great cheese to melt and cook with. It also pairs well with dry, fruity white wines.
