Moliterno al Tartufo is an aged cheese made with sheep's milk and black truffle. It is produced on the island of Sardinia, off the coast of Italy.
This incredibly flavourful cheese is crumbly and melts in the mouth. The savoury and creamy cheese is a delight to the tastebuds expecially when they hit the fudge-like streaks of freshly ground black truffle that had been injected into the cheese wheels during the aging process.
Best to pair with red wines but nothing too strong as to overshadow the bold character of the cheese itself.
